Delores Medved's cheese blintzes

Delores Medved’s Cheese Blintz

Batter

• 4 Eggs well beaten

• 1 Cup flour

• 1 teaspoon salt

• 1 Cup milk

Filling

• 1 ½ Pound cottage cheese

• 2 Egg yolks beaten

• 1 Tablespoon melted butter

• 1 Tablespoon sugar

Directions

1. Press cottage cheese through colander to drain off extra moister

2. Add egg yolks, melted butter and sugar and put into the refrigerator to set

3. For the batter mix all ingredients together in a large mixing bowl

4. Heat a greased skillet and pour a thin amount of batter into it

5. Move pan side to side to cover the bottom of the pan

6. Flip crepe over until each side is lightly brown

7. Place each crepe on a plate to cool

8. When crepes are cool place one tablespoon of filling into the center of each crepe and fold over from both sides and roll up.

9. Heat greased skillet and place Blintz and turn until it is golden brown

10. Then bake in a 350 degree oven for 20 minutes

11. Top with fruit, apple sauce or sour cream
