Candied Pecans

2 cups pecans
2 cups vegetable oil
1 teaspoon cinnamon
1/4 cup sugar
1/8 teaspoon cayenne pepper

And to create simple syrup:
2 cups water
2 cups sugar


Youll need two small pots. Create the simple syrup by heating the sugar and water together.

In separate pot, bring vegetable oil to heat (about 350F). Add pecans, occasionally stirring for 4-5 minutes until the pecans turn a mahogany color. Immediately transfer pecans to pot with simple syrup. Add cayenne pepper and stir occasionally for 4-5 minutes. In a bowl, add cinnamon and the cup of sugar. Transfer pecans into this bowl, tossing until pecans are coated. Lay on a cookie sheet to dry.

When they cool they become crunchy, but when theyre warm theyre even better!
