13WHAM's Alexis Arnold visited with Debbie Maruke, Executive Chef of The Summit at Brighton, and resident Lillian Gilbert to make Puffed Zucchini.

Lillian Gilbert's Puffed Zucchini

Ingredients:

  • 4 cups sliced zucchini
  • 1 large onion chopped
  • 2 Tbsp melted margarine
  • ½ tsp salt and pepper
  • 1 Tbsp horseradish
  • 2 eggs, slightly beaten
  • 3 Tbsp melted margarine
  • 1 large clove garlic, crushed
  • ½ cup cracker crumbs or breadcrumbs

Directions:

  1. Cook onion and zucchini until tender.
  2. Drain well, mash and add margarine, seasoning, horseradish and garlic.
  3. Stir in eggs.
  4. Place into casserole dish. Top with browned crumbs (in a little margarine)
  5. Bake uncovered in a 350 degree oven for 30 minutes.
